Baked Eggplants

2 cups of tomato sauce
2 eggplants
1 cup of grated Parmesan cheese
Olive oil to taste
More Specij Herbes de Provence Seasoning (to taste)

Instructions:

  1. Slice the eggplants into thin rounds and place them in a baking tin.
  2. Brush the slices with olive oil and sprinkle with Provencal herbs.
  3. Cover with foil and bake in a preheated 200°C oven for 15-20 minutes until softened.
  4. Remove the foil, spread tomato sauce over the eggplants, and sprinkle with Parmesan cheese.
  5. Drizzle with more olive oil and return to the oven to bake until golden brown.
