Baked Eggplants
Ingredients:
2 cups of tomato sauce
2 eggplants
1 cup of grated Parmesan cheese
Olive oil to taste
More Specij Herbes de Provence Seasoning (to taste)
Instructions:
- Slice the eggplants into thin rounds and place them in a baking tin.
- Brush the slices with olive oil and sprinkle with Provencal herbs.
- Cover with foil and bake in a preheated 200°C oven for 15-20 minutes until softened.
- Remove the foil, spread tomato sauce over the eggplants, and sprinkle with Parmesan cheese.
- Drizzle with more olive oil and return to the oven to bake until golden brown.
