Whole Chicken with Apples Baked in the Oven
Ingredients:
3 apples
100 g dried prunes
2 tbsp bourbon (or other whiskey)
1 whole chicken (about 1 kg)
Salt, to taste
2 tbsp honey
2 tbsp lemon zest
2 tbsp More Specij Chicken Seasoning with Rosemary and Garlic
Instructions:
- Core and dice the apples into small pieces. Finely chop the prunes. In a bowl, mix the apples, prunes, bourbon, and 1 tsp of the chicken seasoning. Let this mixture sit for 5 minutes to absorb the flavours.
- Lightly rub the inside of the chicken cavity with salt. Fill the cavity with the apple and prune mixture. If any filling is left, you can place it around the chicken in the roasting pan for extra flavour.
- In a small bowl, mix the honey with the remaining chicken seasoning and lemon zest. Add salt to taste. If the honey is too thick, stir in 1–2 tablespoons of olive oil to thin it out. Rub the glaze mixture all over the chicken, making sure to coat it evenly.
- Preheat your oven to 200°C. Place the chicken in a roasting pan and bake for 40–45 minutes, or until a golden-brown crust forms and the juices run clear when pierced.
- After 45 minutes, lower the oven temperature to 180°C.Continue baking until the chicken is fully cooked.
