Korean Style Carrots
Ingredients:
600 g carrots
4-5 tbsp vegetable oil
1-1.5 tbsp 3% vinegar
More Specij Korean Carrot Seasoning (to taste)
Instructions:
- Peel and grate the carrots into thin strips. Sprinkle with salt to taste and let sit for 30 minutes. This helps release moisture from the carrots.
- After 30 minutes, squeeze the carrots to remove the excess juice, then drain the liquid.
- In a small pan, heat the vegetable oil. Once hot, add the vinegar and bring the mixture to a boil.
- Pour the hot oil and vinegar mixture over the carrots. Add the seasoning for Korean carrots and mix everything thoroughly to ensure the flavours are well-distributed.
- Place the carrots in a cool place for 3-4 hours. For even better flavour, refrigerate the salad overnight to let the spices fully infuse.
