Tomatoes in Mustard
Ingredients:
Medium-sized tomatoes
Salt – 1.5 tbsp
Sugar – 1.5 tbsp
Mustard powder – 1.5 tbsp
Water
Instructions:
- Wash the tomatoes thoroughly and pierce the stems with a toothpick to allow the brine to penetrate.
- Wash a 3-litre jar, there’s no need to sterilise it.
- Place the tomatoes into the jar.
- Fill the jar with boiled water at room temperature. Add salt, sugar, and mustard powder to the water.
- Close the jar with a nylon lid and ensure it is tightly sealed.
- Leave the jar at room temperature for three days to allow the tomatoes to ferment. After three days, place the jar in the refrigerator to stop the fermentation process.
