Tomatoes in Mustard

Ingredients:
Medium-sized tomatoes
Salt – 1.5 tbsp
Sugar – 1.5 tbsp
Mustard powder – 1.5 tbsp
Water

Instructions:

  1. Wash the tomatoes thoroughly and pierce the stems with a toothpick to allow the brine to penetrate.
  2. Wash a 3-litre jar, there’s no need to sterilise it.
  3. Place the tomatoes into the jar.
  4. Fill the jar with boiled water at room temperature. Add salt, sugar, and mustard powder to the water.
  5. Close the jar with a nylon lid and ensure it is tightly sealed.
  6. Leave the jar at room temperature for three days to allow the tomatoes to ferment. After three days, place the jar in the refrigerator to stop the fermentation process.
