Meatless Pilaf with Beans

Ingredients:
1 cup beans
1 cup rice
1 carrot
1 onion
2 tbsp vegetable oil
5 tbsp soy sauce
1 tsp More Specij Pilaf Seasoning
1.5 litres water

Instructions:

  1. Soak the beans in water for several hours or overnight. Once soaked, boil them until tender, without adding salt. Drain the beans and reserve the cooking broth in a separate cup or saucepan for later use.
  2. In a large pan or pot, heat the vegetable oil over medium heat. Add the chopped onion and grated carrot. Sauté until the vegetables are soft and golden.
  3. Stir in the pilaf seasoning, soy sauce, and cooked beans. Let everything simmer together for about 10 minutes to blend the flavours.
  4. Add the rice to the pan and mix it with the beans and vegetables. Let the rice absorb the seasonings and sauté for 5 minutes.
  5. Pour the reserved bean broth over the rice mixture. If the broth is not enough to cover the rice, add some boiling water. Cover the pan with a lid and cook on low heat until the rice is tender and all the liquid has been absorbed.
