Meatless Pilaf with Beans
Ingredients:
1 cup beans
1 cup rice
1 carrot
1 onion
2 tbsp vegetable oil
5 tbsp soy sauce
1 tsp More Specij Pilaf Seasoning
1.5 litres water
Instructions:
- Soak the beans in water for several hours or overnight. Once soaked, boil them until tender, without adding salt. Drain the beans and reserve the cooking broth in a separate cup or saucepan for later use.
- In a large pan or pot, heat the vegetable oil over medium heat. Add the chopped onion and grated carrot. Sauté until the vegetables are soft and golden.
- Stir in the pilaf seasoning, soy sauce, and cooked beans. Let everything simmer together for about 10 minutes to blend the flavours.
- Add the rice to the pan and mix it with the beans and vegetables. Let the rice absorb the seasonings and sauté for 5 minutes.
- Pour the reserved bean broth over the rice mixture. If the broth is not enough to cover the rice, add some boiling water. Cover the pan with a lid and cook on low heat until the rice is tender and all the liquid has been absorbed.
