Beef Soup (Kharcho)
Ingredients:
500 g beef
200 g rice
100 g walnuts
150 g tkemali or satsebeli sauce
1–2 onions
3–4 cloves garlic
2 tsp More Specij Khmeli-Suneli Seasoning
Ground red pepper, to taste
Salt, to taste
Fresh herbs (optional, for garnish)
Instructions:
- Cut the beef into small pieces, place them in a pot, cover with water, and cook for 1 hour.
- Rinse the rice thoroughly. Once the beef is cooked, add the rice to the broth and cook for 10 minutes.
- In a pan, fry the onions until golden brown. Add them to the soup.
- Grind the walnuts in a blender, then add them to the soup along with the tkemali or satsebeli sauce.
- Stir in the Khmeli-Suneli seasoning, ground red pepper, and salt to taste. Add the minced garlic and cook for an additional 5–7 minutes.
- Garnish with fresh herbs before serving, if desired.
