Pumpkin Cake

Ingredients:
3.5 cups wheat flour
1 tsp salt
3 tsp baking powder
1 tsp cinnamon
0.5 tsp ground cloves
0.5 tsp ground nutmeg
0.5 tsp ground allspice
2 cups sugar
0.5 cup brown sugar
1 cup vegetable oil
500 g pumpkin puree
4 eggs
1 cup powdered sugar (for icing)
1-2 tbsp milk (for icing)

Instructions:

  1. Preheat the oven to 180°C. Grease and flour a large cake tin.
  2. In a bowl, sift together flour, salt, baking powder, and all the spices.
  3. In another bowl, beat the eggs with sugar, then add the vegetable oil and pumpkin puree.
  4. Gradually mix in the flour mixture until smooth. Pour the batter into the prepared tin.
  5. Bake for 1 hour and 20 minutes, or if baking in two tins, for 50-55 minutes. Let the cake cool.
  6. For the icing, mix the powdered sugar with milk until smooth, and drizzle over the cake.
