Pumpkin Cake
Ingredients:
3.5 cups wheat flour
1 tsp salt
3 tsp baking powder
1 tsp cinnamon
0.5 tsp ground cloves
0.5 tsp ground nutmeg
0.5 tsp ground allspice
2 cups sugar
0.5 cup brown sugar
1 cup vegetable oil
500 g pumpkin puree
4 eggs
1 cup powdered sugar (for icing)
1-2 tbsp milk (for icing)
Instructions:
- Preheat the oven to 180°C. Grease and flour a large cake tin.
- In a bowl, sift together flour, salt, baking powder, and all the spices.
- In another bowl, beat the eggs with sugar, then add the vegetable oil and pumpkin puree.
- Gradually mix in the flour mixture until smooth. Pour the batter into the prepared tin.
- Bake for 1 hour and 20 minutes, or if baking in two tins, for 50-55 minutes. Let the cake cool.
- For the icing, mix the powdered sugar with milk until smooth, and drizzle over the cake.
